Ingredients:
For the Crust:
1 1/2 cups chocolate graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup sour cream
1/2 cup unsweetened cocoa powder
For the Topping:
1 cup sweetened coconut
1 cup pecans
1 cup brown sugar, packed
1/2 cup evaporated milk
1/2 cup unsalted butter
1 teaspoon vanilla extract
Directions:
Make the crust:
Preheat oven to 325°F (160°C). In a mixing bowl, combine the chocolate cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8 to 10 minutes, then remove and let cool.
Make the cheesecake filling:
In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and cocoa powder until smooth.
Assemble the cheesecake:
Pour the cheesecake filling over the cooled crust, smoothing the top. Bake in the preheated oven for 55 to 65 minutes, or until the center is set but slightly jiggly.
Cool the Cheesecake:
Turn off the oven and open the oven door, allowing the cheesecake to cool slowly for about 1 hour. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours, or overnight if possible.
Make the Topping:
In a saucepan over medium heat, combine the coconut, pecans, brown sugar, evaporated milk, butter, and vanilla extract. Cook, stirring constantly, until the mixture thickens and sets, about 5 to 7 minutes.
Top the Cheesecake:
Spread the coconut and pecans over the cooled cheesecake before serving.
Serve & Enjoy:
Slice and enjoy this delicious German Chocolate Cheesecake, a perfect blend of rich chocolate and sweet coconut-nutty goodness!
