Tzatziki Chicken Salad Recipe
Ingredients
For the Chicken:
– 2 large boneless, skinless chicken breasts (or about 1 lb/450 g)
– 1 tablespoon olive oil
– 1 teaspoon dried oregano
– 1 teaspoon garlic powder
– Salt and black pepper, to taste
For the Tzatziki Sauce:
– 1 cup (240 g) Greek yogurt (full-fat or 2%)
– 1/2 cucumber, grated and squeezed to remove excess moisture
– 2 cloves garlic, minced
– 1 tablespoon fresh lemon juice
– 1 tablespoon olive oil
– 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
– Salt and black pepper, to taste
For the Salad:
– 2 cups (about 100 g) mixed salad greens or lettuce
– 1 cup cherry or grape tomatoes, halved
– 1/2 red onion, thinly sliced
– 1/2 bell pepper, thinly sliced
– 1/4 cup Kalamata olives, sliced (optional)
– 1/4 cup feta cheese, crumbled (optional)

 Instructions

1. Prepare the Chicken:
1. **Season Chicken**: Rub the chicken breasts with olive oil, dried oregano, garlic powder, salt, and black pepper.
2. **Cook Chicken**: Heat a grill pan or skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing or chopping into bite-sized pieces.
2. Make the Tzatziki Sauce:
1. **Prepare Cucumber**: Grate the cucumber and squeeze out excess moisture using a clean kitchen towel or paper towels.
2. **Combine Ingredients**: In a bowl, mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, and fresh dill. Season with salt and black pepper to taste.
3. **Chill**: Refrigerate the tzatziki sauce until ready to use.
3. Assemble the Salad:
1. **Combine Salad Ingredients**: In a large bowl, combine the salad greens, cherry tomatoes, red onion, bell pepper, olives (if using), and feta cheese (if using).
2. **Add Chicken**: Add the cooked chicken pieces to the salad.
3. **Toss with Tzatziki**: Spoon the tzatziki sauce over the salad and gently toss to combine. Alternatively, you can serve the tzatziki sauce on the side for drizzling.
 4. Serve:
1. **Serve**: Serve immediately or chill for a bit before serving. Enjoy as a light lunch, dinner, or a refreshing side dish.
Tips:
– **Chicken Variations**: You can use leftover rotisserie chicken or grill extra chicken for another meal.
– **Vegetable Variations**: Feel free to add other vegetables like cucumbers, radishes, or avocado to your salad.
– **Tzatziki Consistency**: If you prefer a thicker tzatziki sauce, use a bit more Greek yogurt or strain the cucumber more thoroughly.
This Tzatziki Chicken Salad is a vibrant and healthy dish that combines the creaminess of tzatziki with the freshness of a Mediterranean-inspired salad. Enjoy!
