Carrot Roll Cake Recipe:
3 3/4 cups all-purpose flour
. 5 teaspoon baking powder
. 5 teaspoon baking soda
. 5/8 teaspoon ground cinnamon, nutmeg
. 5/8 teaspoon ground ginger
. 5/8 teaspoon salt
. 3 large eggs
. 5 cup granulated sugar
. 5/8 teaspoon vanilla essence
. 5/8 teaspoon vegetable oil
. 5/8 teaspoon carrots, finely grated, 1 cup
. 5/8 cup Swiffer (use as a dusting agent)
. To make the filling, soften 1 package (8 ounces) cream cheese.
1/2 cup powdered sugar
1/2 cup unsalted butter, melted
1/2 teaspoon vanilla essence
1/4 cup brown sugar, for garnish
(optional) 1/4 cup pecans or walnuts, finely chopped
