Pan-Seared Mediterranean Cod with Tomato Basil Sauce
Ingredients:
– 2 Cod fillets
– 1 can (14.5 oz) Diced tomatoes
– 1/4 cup Fresh basil, chopped
– 2 Garlic cloves, minced
– 1 Onion, diced
– 1 Lemon wedge
– 2 cups Spinach
– 1/3 cup Black olives, sliced
– Salt and pepper, to taste
– 2 tbsp Olive oil
Directions:
