Ingredients:
- 4 large russet potatoes
- 2-3 tablespoons olive oil
- Salt, to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)

- 1 cup shredded cheddar cheese (or any cheese of your choice like mozzarella or Monterey Jack)

Instructions:
1. Prepare the Potatoes:
