Cheesy Sausage and Potato Casserole

Ingredients:

  • 4-5 medium russet potatoes, peeled and thinly sliced
  • 1 small onion, diced
  • 2 cups shredded cheddar cheese (or a blend of cheddar and mozzarella)
  • 1 cup sour cream
  • 1/2 cup heavy cream (or milk for a lighter version)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional for extra flavor)
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter (for greasing the casserole dish)

Instructions:

1. Prepare the Sausage:

  • In a large skillet, cook the breakfast sausage over medium heat until browned and fully cooked, breaking it up into crumbles as it cooks (about 5-7 minutes). Drain any excess grease and set the cooked sausage aside.
