Air Fryer Spinach and Feta Cheese Stuffed Chicken Breast

  1. Butterfly the Chicken:
    • Use a sharp knife to cut the chicken breasts in half, leaving about 1/2 inch uncut on one side to allow closing them up.
    • Season both sides of the chicken with salt and pepper.
  2. Prepare the Filling:
    • Add the feta cheese and cooked spinach to the middle of each chicken breast, then fold them up.
  3. Coat the Chicken:
    • In a small bowl, mix the egg and 2 tablespoons of water.
    • Brush the egg wash over the chicken breasts and coat them with bread crumbs.
  4. Prepare the Air Fryer:
    • Spray your air fryer basket with cooking spray.
    • Use toothpicks to secure the chicken breasts or place them seam-side down into the air fryer basket.
    • Add some extra seasoning on top.
  5. Cook the Chicken:
    • Spray the tops of the chicken breasts with olive oil spray and place them in the air fryer basket.
    • Set the air fryer to 350°F (175°C) and cook for 15-20 minutes, depending on the thickness of the chicken breasts.
    • Ensure the internal temperature of the chicken reaches 165°F (74°C) before removing them from the air fryer.
  6. Serve:
    • Plate the chicken breasts, serve, and enjoy!
