Ingredients:

20 g (0.7 oz) yeast
200 ml (6.8 fl oz) warm milk
70 g (2.5 oz) sugar
50 g (1.8 oz) flour (for the yeast mixture)
500 g (18 oz) flour
60 g (2.1 oz) melted butter
2 egg yolks
100 g (3.5 oz) melted butter (for the filling)
100 g (3.5 oz) brown sugar
30 g (1.1 oz) cinnamon
1 egg
40 g (1.4 oz) almond flakes
Directions:

Activate the Yeast:
In a small bowl, combine 20 g of yeast, 200 ml of warm milk, 70 g of sugar, and 50 g of flour.
Mix well and let the mixture hydrate for 10 minutes until it becomes frothy.
Prepare the Dough:
In a large mixing bowl, combine 500 g of flour, 60 g of melted butter, and 2 egg yolks.
Add the yeast mixture and knead until a smooth dough forms.
Cover the bowl with a clean cloth and let the dough leaven for 30 minutes in a warm place.
Prepare the Filling:
In a small bowl, mix 100 g of melted butter, 100 g of brown sugar, and 30 g of cinnamon until well combined.
Assemble the Cake:
After the dough has risen, roll it out on a floured surface into a large rectangle.
Spread the cinnamon filling evenly over the dough.
Roll the dough up tightly from one long side to the other to form a log.
Slice the log into even pieces and place them in a greased baking pan.
Prepare for Baking:
Preheat your oven to 180°C (356°F).
In a small bowl, beat 1 egg and brush it over the top of the rolls.
Sprinkle 40 g of almond flakes on top.
Bake the Cake:
Place the pan in the preheated oven and bake for 40 minutes, or until golden brown and cooked through.
Cool and Serve:
Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
