Apple and mascarpone fondue

Peel, core and cut the apples into cubes or thin slices, then reserve them.

Preheat the oven to 180°C (thermostat 6). Butter and flour a cake mould to prevent the fondant from sticking.
In a bowl, beat the eggs and sugar until lightly whipped. Add the mascarpone and mix well to obtain a smooth mixture.
Sift the flour and baking powder, then add to the mixture. Also add a pinch of salt and vanilla extract. Mix gently until the mixture is smooth.
Pour half the batter into the prepared tin. Arrange a layer of apples, then cover with the rest of the batter, smoothing the surface well.
Bake for 30-35 minutes, until the fondant is golden and cooked through (check with the tip of a knife).
Leave to cool before defrosting and, if desired, sprinkle a little icing sugar for a sweet finishing touch.

Total time: 45-50 minutes
