Carefully create a pocket in each chicken breast by slicing it horizontally. Spoon the cream cheese mixture into each pocket. If needed, use toothpicks to keep the filling secure inside the chicken.
Wrap with Bacon:
Take 2 slices of bacon and wrap them around each stuffed chicken breast. Secure the bacon with toothpicks if needed to hold everything in place.
Cook Chicken:
Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the bacon-wrapped chicken breasts to the skillet. Sear them for 2-3 minutes on each side, or until the bacon becomes crispy and golden brown.
Bake:
Transfer the skillet with the seared chicken to the preheated oven. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the filling is hot and bubbly.
Garnish and Serve:
If you used toothpicks, remove them carefully before serving. Sprinkle freshly chopped parsley on top for a pop of color, if desired. Serve hot and enjoy!
