- Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
- Prepare the potatoes: Wash the potatoes thoroughly, then cut them into wedges. To do this, slice the potato in half lengthwise, then cut each half into 4-6 wedges, depending on the size of the potato. If you prefer crispier wedges, you can soak them in water for about 30 minutes to remove excess starch (this step is optional).
- Season the wedges: In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper. Toss the potato wedges in the mixture until evenly coated.
- Bake: Arrange the seasoned potato wedges in a single layer on the prepared baking sheet. Make sure they are spaced out, so they crisp up properly. Bake for 35-40 minutes, flipping the wedges halfway through, until they are golden and crispy.
- Add Parmesan and garnish: Once the potato wedges are crispy and golden, remove them from the oven. While they are still hot, sprinkle them with the grated Parmesan cheese, and gently toss to coat. You can also sprinkle them with fresh parsley for extra flavor and color.
- Serve: Serve the garlic Parmesan potato wedges immediately with your favorite dipping sauce, such as ranch, marinara, or garlic aioli.
