Ingredients:
- 4-5 medium potatoes, peeled and diced into 1-inch cubes
- 1 lb (about 4 links) sausage (Italian sausage, breakfast sausage, or any preferred type), casings removed
- 1 small onion, finely chopped
- 1 bell pepper, chopped (optional)
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 1/2 cup sour cream
- 1/4 cup milk
- 1 teaspoon dried oregano (optional)
- Salt and pepper, to taste
- Olive oil, for cooking

Instructions:
