Cooking sweet potatoes:
Preheat the oven to 200°C. Wash the sweet potatoes without peeling them and pierce them with a fork. Wrap them in sulphur paper and cook for about 45 minutes, until tender.
Preparing the lardons:
In a pan, fry the lardons without grease until they are golden brown and crispy. Drain them on absorbent paper.
Assembly:
Once the sweet potatoes are cooked, cut them in half and cover with fresh cheese. Add the lardons and sprinkle with some chopped chives. Salt, pepper and add a drizzle of olive oil before serving.
