Instructions:
Brown the beef stew meat in olive oil in a large pot, then set it aside.
Sauté onion and garlic in the same pot for 3 minutes, then add chili powder, cumin, and paprika.
Add beef broth, potatoes, bell peppers, and diced tomatoes. Bring to a boil, then reduce the heat.
Cover and simmer for 1-1.5 hours, until the beef is tender and the flavors meld together.
Season with salt and pepper, and serve hot.
