Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce

1. Cook the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Cook the chicken until golden brown on both sides and cooked through. Remove the chicken from the skillet and set aside.

2. Prepare the Vegetables: In the same skillet, add a bit more olive oil if needed. Add the sliced mushrooms and cook until they start to brown. Add the minced garlic and cook for another minute.

3. Make the Sauce: Pour in the heavy cream and stir, scraping up any browned bits from the bottom of the skillet. Add the grated Parmesan cheese and Italian seasoning. Let the sauce simmer and thicken for a few minutes.

4. Add Spinach: Once the sauce has thickened slightly, add the fresh spinach to the skillet. Stir until the spinach wilts.

5. Combine Everything: Return the cooked chicken to the skillet and spoon some of the creamy sauce over the chicken. Let it all simmer together for a few more minutes to allow the flavors to meld.

6. Garnish and Serve: Garnish with fresh parsley and additional Parmesan cheese if desired. Serve hot over pasta, rice, or with crusty bread to soak up the delicious sauce.
