Ingredients
Dates (preferably Medjool): 1¼ cups | 300 g
Roasted Almonds: 1¼ cups | 200 g
Dark Chocolate (for coating): Approx. 3.5 oz | 100 g
Directions
Prepare the Dates:
Wash the dates thoroughly and soak them in warm water for 10 minutes to soften. Drain and pat dry.
Grind the Almonds:
2. In a food processor, grind the roasted almonds until they are fine but not overly processed into almond butter.
Form the Dough:
3. Add the soaked dates to the ground almonds in the food processor. Blend until the mixture becomes sticky and forms a cohesive dough.
Shape the Cookies:
4. Roll the mixture into small balls.
5. Line a citrus juicer or a flat-bottomed mold with plastic wrap and press each ball into a cookie shape.
6. Place the shaped cookies on a tray lined with parchment paper.
