1. Prepare the Dough:
In a large bowl, beat the softened butter, vegetable oil, granulated sugar, and brown sugar together until light and fluffy (2–3 minutes).
Add the egg and vanilla extract (or raspberry liqueur) and mix until combined.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Gently fold in the raspberry preserves until incorporated.
2. Chill the Dough:
Cover the dough and refrigerate for at least 2 hours, or up to 24 hours. This helps the dough firm up and enhances the flavors.
3. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
4. Shape the Cookies:
In a shallow bowl, combine the confectioners’ sugar and finely crushed freeze-dried raspberries.
Scoop about 1½ tablespoons of dough and roll it into a ball.
