- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the dough: In a large mixing bowl, combine the brownie mix, flour, vegetable oil, eggs, and vanilla extract. Stir until the dough comes together. The dough will be thick and sticky, similar to brownie batter.
- Add mix-ins (optional): Fold in chocolate chips and/or chopped nuts if you’re using them.
- Scoop the dough: Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet. Leave about 2 inches between each cookie to allow for spreading.
- Bake: Bake for 10-12 minutes, or until the edges of the cookies are set but the centers are still soft. The cookies will firm up as they cool. Be careful not to overbake, as you want them to stay soft and fudgy.
- Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Tips:
- If you want extra chewy cookies, slightly underbake them. They will continue to cook on the baking sheet as they cool.
- For an added twist, try adding a teaspoon of instant coffee to the dough to enhance the chocolate flavor.
These Brownie Mix Cookies are soft, rich, and full of chocolatey goodness! Perfect for when you’re craving brownies but want them in a quick, bite-sized form. Enjoy!
