Creamy Baked Macaroni and Cheese

Instructions:
1. Cook the Pasta:
Preheat your oven to 375°F (190°C).
Boil a large pot of salted water and cook the macaroni until just al dente (it will cook more in the oven). Drain and set aside.
2. Make the Cheese Sauce:
In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes to form a roux (it should bubble slightly but not brown).
Gradually pour in the milk and cream, whisking constantly to avoid lumps. Cook until the mixture thickens and coats the back of a spoon, about 5-7 minutes.
Stir in garlic powder, onion powder, paprika, salt, and pepper.
Reduce heat to low, and add 2 cups of shredded cheddar, mozzarella, and Parmesan. Stir until melted and smooth.
3. Combine Pasta and Sauce:
Add the cooked pasta to the cheese sauce and mix until fully coated.
4. Assemble the Casserole:
Transfer the macaroni and cheese to a greased 9×13-inch baking dish.
Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
5. Add the Breadcrumb Topping:
In a small bowl, mix the panko breadcrumbs, melted butter, and paprika (if using).
Spread the breadcrumb mixture evenly over the cheese layer.
6. Bake:
Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and crispy.
7. Serve:
Let the macaroni and cheese rest for 5 minutes before serving. Enjoy the creamy, cheesy goodness!
Tips:
For extra flavor, mix in cooked bacon, sautéed onions, or jalapeños.
Use a mix of your favorite cheeses for a more complex flavor profile—Gruyère, Gouda, or Monterey Jack work wonderfully.
