Ingredients:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk (or heavy cream for an even richer sauce)
- 1 1/2 cups shredded cheese (cheddar is a classic, but you can mix with Monterey Jack, mozzarella, or even pepper jack for extra flavor)
- 1/4 teaspoon garlic powder (optional, for extra flavor)
- 1/4 teaspoon onion powder (optional)
- Salt and pepper, to taste
- 1 tablespoon Dijon mustard (optional, adds a slight tang and depth)
Instructions:
1. Make the Roux:
- In a medium saucepan, melt the butter over medium heat.
- Once the butter is melted, add the flour. Stir continuously to create a smooth paste. Cook the mixture (called a roux) for about 1-2 minutes, just enough to remove the raw flour taste. Be careful not to let it brown.
