  1. Prepare the potato mixture: In a bowl, combine the mashed potatoes, grated cheese, cooked meat (if using), chopped green onions or parsley (if using), salt, and pepper. Mix until all ingredients are well incorporated. The mixture should be thick and easy to handle. If it feels too soft, you can add a little more mashed potatoes or breadcrumbs.
  2. Shape the croquettes: Wet your hands slightly and take small portions of the potato mixture. Roll them into small logs or balls (about 1-2 inches in length, depending on your preference).
  3. Coat the croquettes: Set up a breading station. Place the flour in one shallow dish, the beaten egg in another, and the breadcrumbs in a third. Roll each croquette first in the flour to coat lightly, then dip it into the egg, and finally coat it evenly with breadcrumbs. Repeat this process for all croquettes.
  4. Heat the oil: In a deep frying pan or a large pot, heat about 1-2 inches of oil over medium heat. The oil should be hot enough for frying, around 350°F (175°C). You can test if the oil is ready by dropping in a small piece of bread or a breadcrumb—if it sizzles, the oil is hot.
  5. Fry the croquettes: Carefully place the croquettes into the hot oil, a few at a time, without overcrowding the pan. Fry them for 3-4 minutes, turning occasionally, until they are golden brown and crispy on all sides.
  6. Drain: Remove the croquettes from the oil with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
  7. Serve: Serve your croquettes hot with a dipping sauce like ketchup, aioli, or a spicy mayo.

  • Baking option: If you prefer a lighter version, you can bake the croquettes. Preheat your oven to 400°F (200°C) and bake the croquettes on a parchment-lined baking sheet for about 20-25 minutes or until golden, flipping halfway through.
