Mix ingredients: Add eggs, shredded cheese, and sautéed spinach to the softened potato nuggets. Mash everything together until well combined.
Cook in waffle iron: Place about 1 ⁄2 cups of the potato mixture into the preheated waffle iron and spread evenly. Close the waffle iron and cook for 4 to 6 minutes, or until the potato wafer bites are crispy and golden brown.
Repeat with the remaining mixture until all the waffles are cooked.
