Festive Jelly Slice

Prepare the Base: Crush the biscuits and mix with melted butter. Press the mixture firmly into a lined tray to form the base, then chill in the fridge.

Make the Lemon Filling: Dissolve 2 ½ tsp gelatine in ¾ cup boiling water, stirring until clear. Combine this with the condensed milk and lemon juice. Pour over the chilled base and refrigerate until firm.

Prepare the Jelly: Mix strawberry and lime jelly in separate bowls as per packet instructions, adding 1 tsp of gelatine to each for extra firmness. Let the jelly cool slightly.

Assemble the Layers: Once the creamy layer is set, pour the strawberry jelly over one side of the slice and the lime jelly over the other. Return to the fridge to set completely.
