Prepare the Potatoes: Wash and peel the potatoes if desired (peeling is optional). Then, cut them into thin slices or small cubes. The thickness of the slices will affect the cooking time, so try to make them relatively uniform.

Prepare the Onion: Peel and thinly slice the onion.

Heat the Oil: In a large skillet or frying pan, heat the oil over medium-high heat. You can use enough oil to lightly coat the bottom of the pan.

Add Potatoes: Once the oil is hot, add the sliced potatoes to the pan in a single layer. Allow them to cook without stirring for a few minutes to develop a crispy golden crust on one side.

Add Onions: After the potatoes have started to brown on one side, add the sliced onions to the pan. Stir them in with the potatoes.

Season: Season the potatoes and onions with salt, pepper, and any optional seasonings you like. This is where you can get creative with the flavors. Paprika and garlic powder are common choices.

Fry Until Crispy: Continue cooking the potatoes and onions, stirring occasionally, until the potatoes are golden brown and crispy on the outside. This can take anywhere from 15 to 30 minutes, depending on the size of your potato slices and the heat of your stove.

Serve: Once the fried potatoes and onions are cooked to your liking, remove them from the pan and serve hot. They make a fantastic side dish for breakfast, lunch, or dinner.

Optional Variations: You can customize this dish by adding other ingredients like bell peppers, garlic, or herbs. Some people like to top it with grated cheese or serve it with ketchup or hot sauce.
