Garlic Butter Steak Bites and Mash

Make the mash:
Cook the potatoes: Place the peeled and diced potatoes in a large pot. Cover with cold water, add a pinch of salt and bring to a boil over medium-high heat. Reduce the heat and simmer until the potatoes are tender, about 15 minutes.

Mashed Potatoes: Drain the potatoes and return them to the pot. Add the milk and butter. Mash until smooth and creamy. Season with salt and pepper to taste.

Make the Steak Bites:
Cook the Steak Bites: Heat the vegetable oil in a large skillet over medium-high heat. Add the steak bites in batches to avoid crowding the pan. Cook for 2-3 minutes per side for medium-rare or until desired doneness. Remove from the pan and set aside.

Make the Garlic Butter: In the same skillet, reduce the heat to medium. Add the minced garlic and cook for 1 minute until fragrant. Add the butter, thyme, and rosemary. Stir until the butter has melted and the garlic is lightly browned.

Stir: Return the cooked steak bites to the skillet and stir to coat with the garlic butter. Cook for another minute to heat through. Season with salt and pepper to taste.

Serve: Arrange the steak bites on a bed of mashed potatoes. Drizzle the remaining garlic butter from the pan over the top.
