Grilled Balsamic Beef

1. Prepare the Marinade:
In a mixing bowl, whisk together the balsamic vinegar, olive oil, Worcestershire sauce, minced garlic, sliced green onion, salt, black pepper, cayenne pepper, and honey. Add the fresh rosemary leaves and mix well.

2. Marinate the Beef:
Cut the beef top sirloin into 1 1/4- to 1 1/2-inch cubes.
Place the beef cubes in the marinade, ensuring they are fully coated.
Cover and refrigerate overnight, tossing occasionally to distribute the marinade evenly.

3. Prepare for Grilling:
Thread the marinated beef cubes onto the skewers.
Pat the skewers dry with a paper towel to remove excess marinade, but reserve the marinade for basting.

4. Grill the Beef:
Preheat the grill to high heat.
Grill the beef skewers, basting with the reserved marinade, for about 5 minutes per side or until the desired doneness is reached (medium doneness is recommended).

5. Rest the Beef:
Remove the skewers from the grill and let them rest for 5 minutes to retain the juices.

6. Prepare the Sauce:
While the beef is resting, bring the remaining marinade to a boil in a saucepan. Boil for 1-2 minutes to ensure it is safe to use as a sauce.
Strain the boiled marinade to remove any solids.

7. Serve:
Drizzle the strained sauce over the grilled beef skewers or serve it on the side for dipping.
