Prepare the apples :
Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper or lightly grease it.
Peel and grate the apples, then gently squeeze out excess moisture with a paper towel if they are very juicy.
Mix the ingredients :
In a mixing bowl, whisk the eggs until well combined. Add the grated apples, oats, cocoa powder, vanilla extract, cinnamon and baking powder.
Mix until the batter is smooth and all ingredients are incorporated. Stir in optional ingredients, such as honey or nuts, if using.
Cook :
Pour the batter into the prepared baking dish, spreading it evenly.
Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
Let cool and serve :
Let the treat cool in the baking dish for about 10 minutes, then cut into squares.
Serve as is or with a dollop of Greek yogurt or a drizzle of almond butter for added flavor.
