Healthy Cabbage Casserole
Ingredients:
- 1 medium head of cabbage, shredded
- 1 lb ground turkey or lean ground chicken (you can also use lean ground beef)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes (fresh or canned)
- 1/2 cup low-sodium chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese (optional, for topping)
- 1 tablespoon olive oil (for cooking)
Instructions:
1. Prepare the cabbage:
- Preheat your oven to 350°F (175°C).
- Shred the cabbage using a knife or a food processor. Set aside.
2. Cook the ground meat:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic, cooking for 2-3 minutes until softened and fragrant.
- Add the ground turkey (or chicken, or beef) to the skillet and cook until browned, breaking it up into small pieces with a spoon. This should take about 5-7 minutes.
3. Add the seasonings:
- Stir in the diced tomatoes, chicken broth, oregano, basil, paprika, salt, and pepper. Let it simmer for 5 minutes so the flavors meld together.
