Lemon & Garlic Chicken Bites

  1. Prepare the Marinade:
    • In a bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, dried oregano (if using), honey (if using), salt, and pepper. Stir until well combined.
  2. Marinate the Chicken:
    • Add the chicken pieces to the bowl with the marinade. Toss until all the chicken is coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to infuse.
  3. Cook the Chicken Bites:
