Loaded Cheesy Pocket Tacos are a delicious, cheesy, and flavorful take on traditional tacos, where the taco shell is made out of soft, doughy pockets filled with seasoned meat, melty cheese, and your favorite taco toppings. Loaded Cheesy Pocket Tacos Recipe

Ingredients:

For the Dough (Pocket):

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (or vegetable oil)
  • 3/4 cup warm water (adjust as needed)
  • 1 tablespoon melted butter (optional, for extra flavor)

For the Filling:

  • 1 lb ground beef (or ground chicken or turkey)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade seasoning mix)
  • 1/2 cup water (or as directed by seasoning packet)
  • 1 1/2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • 1/2 cup sour cream (optional, for serving)
  • Salsa (optional, for serving)
  • Fresh cilantro, chopped (optional, for garnish)
  • Jalapeño slices (optional, for added heat)

Optional Toppings:

  • Chopped lettuce
  • Diced tomatoes
  • Shredded cheese
  • Avocado or guacamole
  • Sour cream

Instructions:

1. Make the Dough:
  • In a large bowl, combine the flourbaking powder, and salt.
  • Add the olive oil and warm water and stir until the dough begins to come together. If the dough is too dry, add a little more water, a tablespoon at a time. If it’s too wet, sprinkle in a bit more flour.
  • Knead the dough on a floured surface for about 3-4 minutes until smooth and elastic.
  • Cover the dough with a clean towel and let it rest for 15-20 minutes.
2. Prepare the Filling:
  • While the dough is resting, cook the ground meat in a large skillet over medium heat. Break it apart with a spoon as it cooks. Once browned, drain any excess fat.
  • Add the onion and garlic to the skillet and cook for another 3-4 minutes until softened.
  • Stir in the taco seasoning and water, and let it simmer for 5 minutes until the sauce thickens and the meat is fully coated. Remove from heat and set aside.
