Ingredients
2½ cups (200g) shredded sweetened coconut
½ cup (120ml) sweetened condensed milk
1 teaspoon vanilla extract (or coconut extract for extra flavor)
Pinch of salt
1 cup (180g) semi-sweet or dark chocolate chips (for coating)
1 tablespoon (15g) coconut oil or butter (optional, for smoother chocolate coating)
Optional Garnish:
Extra shredded coconut for sprinkling
White chocolate for drizzling
Instructions
1. Make the Coconut Mixture
1. In a mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt.
2. Mix thoroughly until the mixture is sticky and well combined.
3. If the mixture feels too soft to shape, refrigerate it for 15–20 minutes to firm up slightly.
2. Shape the Balls
1. Scoop about 1 tablespoon of the mixture and roll it into a ball using your hands.
2. Place the balls on a baking sheet lined with parchment paper.
3. Repeat this process until all the mixture is used.
4. Refrigerate the formed balls for 30 minutes to firm them up.
3. Melt the Chocolate
1. In a microwave-safe bowl or over a double boiler, melt the chocolate chips with the coconut oil (if using).
2. Stir frequently to ensure the chocolate melts evenly and doesn’t burn.
