Preheat the oven: Set your oven to 375°F (190°C). Grease a 9×13-inch baking dish or skillet.
Prepare the batter:
In a mixing bowl, combine flour, granulated sugar, baking powder, and salt. Gradually whisk in the milk and melted butter until smooth. Set aside.
Prepare the peaches:
If using fresh peaches, peel and slice them.
In a saucepan over medium heat, combine the peaches, brown sugar, vanilla extract, almond extract (if using), and cinnamon. Cook for 5 minutes or until slightly softened.
Assemble the cobbler:
Pour the batter evenly into the prepared baking dish.
Spoon the peaches and their juices over the batter. Don’t mix; the batter will rise as it bakes.
Bake:
Place the cobbler in the oven and bake for 35–40 minutes, or until the top is golden brown and the batter is fully cooked.
