1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a mixing bowl, combine the creamy peanut butter, granulated sugar, egg, and vanilla extract. Mix until well blended.
3. Scoop small balls of dough onto the baking sheet and flatten each with a fork to create a crisscross pattern.
4. Bake for 10-12 minutes, until the edges are golden brown. Allow to cool completely.
5. For the filling, beat the butter and brown sugar together until smooth. Gradually add powdered sugar and heavy cream. Mix until fluffy.
6. Spread or pipe the filling onto the flat side of one cookie and top with another cookie to make a sandwich.
