Pineapple and zucchini cake recipe

Preheat the oven to 180°C.
In a large bowl, beat the eggs and sugar until frothy.
Add oil and vanilla. Then mix well.
Add grated zucchini and chopped pineapple.
In another bowl, mix together the flour, baking powder and salt. Add this dry mixture to the wet mixture and mix well.
Pour the batter into a greased and floured pan.
Bake for about 45 minutes, or until a knife inserted into the center comes out clean.
Allow to cool before defrosting and sprinkle with powdered sugar if desired.
Treat yourself to this moist and tasty cake!
