- Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, and salt.
- Add wet ingredients: Add the olive oil and warm water to the dry ingredients. Stir to combine and form a soft dough. You may need to add a little more water, a tablespoon at a time, if the dough is too dry. The dough should be smooth and slightly tacky but not sticky.
- Knead the dough: Turn the dough out onto a lightly floured surface and knead for about 2-3 minutes until it becomes smooth and elastic.
- Divide and roll: Divide the dough into 4-6 equal portions. Roll each portion into a ball, then flatten each ball with your hands or a rolling pin into thin discs (about 1/4 inch thick). You can make them as thick or thin as you like.
- Cook the flatbreads: Heat a cast-iron skillet or non-stick frying pan over medium-high heat and add a little olive oil. Once the pan is hot, cook each flatbread for 2-3 minutes on each side, or until golden brown spots form and the flatbread puffs up slightly.
- Serve: Remove from the pan and place on a plate. You can brush the flatbreads with a little more olive oil or butter if you like, and sprinkle with herbs or salt for extra flavor.
Optional Flavor Variations:
- Garlic & Herb Flatbread: Add 1 teaspoon of garlic powder or minced fresh garlic and some chopped rosemary or thyme into the dough before mixing.
- Cheese Flatbread: Sprinkle some shredded mozzarella or Parmesan cheese on top of the dough as you roll it out for a cheesy twist.
