1. Prepare the Oven and Baking Dish
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or a little bit of olive oil to prevent sticking.

2. Cook the Meat and Aromatics
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and cook for about 3-4 minutes, stirring occasionally, until softened. Then, add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Next, add the ground beef or pork to the skillet. Break up the meat with a spoon as it cooks, ensuring it browns evenly. Continue cooking until the meat is fully browned and cooked through, which should take about 5-7 minutes. Once cooked, drain any excess fat from the pan.

3. Add Tomatoes and Seasonings
To the cooked meat, stir in the diced tomatoes, tomato sauce, Worcestershire sauce, smoked paprika, salt, and black pepper. Stir well to combine, and let the mixture simmer for about 5-7 minutes. This allows the flavors to meld together, creating a savory and tangy base for the casserole.

4. Assemble the Casserole
In a large mixing bowl, combine the cooked egg noodles, drained sauerkraut, sour cream, and the meat mixture. Mix everything together until well combined, making sure the sauce coats the noodles evenly. Pour this mixture into the prepared baking dish, spreading it out to create an even layer.

5. Top with Cheese and Bake
Sprinkle the shredded cheddar cheese evenly over the top of the casserole. This will melt into a golden, bubbly layer of deliciousness as it bakes. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden on the edges.
