  1. Prepare the ingredients:
    • Wash and cut the broccoli into bite-sized florets.
    • Clean and slice the mushrooms.
    • Slice the onion and mince the garlic.
  2. Blanch the broccoli (optional, but it makes it tender):
    • Bring a pot of salted water to a boil.
    • Add the broccoli florets and cook for about 2-3 minutes, until just tender but still bright green.
    • Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again when ready to use.
  3. Cook the stir-fry:
    • Heat the olive oil in a large skillet or wok over medium-high heat.
    • Add the onions and sauté for 2-3 minutes until they begin to soften.
    • Add the garlic and cook for another 30 seconds, being careful not to burn it.
    • Toss in the sliced mushrooms and stir-fry for 5-6 minutes until they begin to brown and soften.
  4. Combine with broccoli:
    • Add the blanched broccoli (or fresh if you skipped blanching) to the skillet and stir everything together.
    • Drizzle with soy sauce and sesame oil, stirring to coat evenly.
    • Season with salt, pepper, and red pepper flakes if you like some spice.
  5. Finish and serve:
    • Stir everything until well combined and heated through.
    • Garnish with sesame seeds if desired.
    • Serve hot as a side dish or over rice or noodles for a full meal.

Tips:

  • You can add other vegetables like bell peppers, carrots, or snap peas to make the dish even more colorful and nutritious.
  • For protein, consider adding tofu, chicken, or beef to the stir-fry.
  • Adjust the seasoning to your taste with more soy sauce, garlic, or ginger.

Enjoy your healthy and flavorful sautéed mushroom and broccoli stir-fry!
