Step 1: Prepare the Turkey (or Chicken)
Cut the Meat: Slice the 500 g of turkey or chicken fillet into bite-sized strips or cubes. Make sure they’re roughly the same size for even cooking.
Marinate the Meat: In a bowl, mix the turkey pieces with 1 egg white, 2 tbsp of cornstarch, and 1 tbsp of lemon juice. Toss the meat in the mixture until well coated. This step helps tenderize the meat and ensures a crispy outer layer during frying. Let it sit for 10-15 minutes to marinate.
Step 2: Prepare the Sauce
Mix the Sauce Ingredients: In a small bowl, combine 1-2 tbsp of soy sauce, 1 tsp of honey, 2 minced garlic cloves, 1 tsp of mustard, and a dash of black pepper. Stir the mixture until the honey is dissolved, and the sauce is smooth. Set this aside.
Step 3: Cook the Turkey (or Chicken)
Heat the Pan: Heat a large skillet or wok over medium-high heat. Add a little vegetable oil to coat the bottom of the pan.
Fry the Turkey: Once the pan is hot, add the marinated turkey (or chicken) pieces in a single layer. Fry them for 3-4 minutes on each side until they are golden brown and cooked through. Be careful not to overcrowd the pan; cook in batches if necessary.
Add the Sauce: When the turkey is almost fully cooked, reduce the heat to medium. Pour the prepared soy sauce mixture over the turkey and stir to coat the pieces evenly.
Add Sesame Seeds: Sprinkle 2 tsp of sesame seeds over the dish and stir-fry for another 2-3 minutes. This step ensures the meat is fully cooked and the sauce is slightly thickened and glossy.
Step 4: Final Touches
Season: Taste and adjust the seasoning with additional salt or pepper if needed. Since soy sauce is salty, be cautious with extra salt.
Garnish: For a finishing touch, you can sprinkle a little more sesame seeds or freshly chopped green onions on top before serving.
