  1. Prepare the ingredients:
    • Peel and devein the shrimp if not already done. Pat them dry with a paper towel.
    • Trim the asparagus and cut it into 2-inch pieces.
    • Clean and slice the mushrooms.
    • Mince the garlic and ginger.
  2. Cook the shrimp:
    • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
    • Add the shrimp in a single layer and cook for about 2-3 minutes per side until they turn pink and are cooked through. Remove the shrimp from the skillet and set them aside.
  3. Stir-fry the vegetables:
    • In the same skillet, add the remaining 1 tablespoon of oil.
    • Add the garlic and ginger, stir-frying for about 30 seconds until fragrant.
    • Add the asparagus and cook for 2-3 minutes, stirring occasionally, until they start to become tender but still crisp.
    • Add the mushrooms to the skillet and cook for another 3-4 minutes, stirring occasionally, until they release their moisture and soften.
  4. Combine and season:
    • Once the vegetables are cooked, add the shrimp back into the skillet.
    • Pour in the soy sauce, oyster sauce (if using), sesame oil, and honey (if using). Stir everything together to combine.
    • Add red pepper flakes, salt, and pepper to taste.
    • If the stir-fry looks dry, add a tablespoon or two of water or chicken broth to create a little sauce.
  5. Finish and garnish:
    • Stir everything together for another 1-2 minutes, allowing the flavors to meld and the shrimp to heat through.
    • Garnish with sesame seeds and green onions, if desired.
  6. Serve: Serve the shrimp and asparagus stir-fry hot, either on its own or with steamed rice, quinoa, or noodles.

Enjoy your healthy, flavorful shrimp and asparagus stir-fry with mushrooms!
