- Prepare the ingredients:
- Peel and devein the shrimp if not already done. Pat them dry with a paper towel.
- Trim the asparagus and cut it into 2-inch pieces.
- Clean and slice the mushrooms.
- Mince the garlic and ginger.
- Cook the shrimp:
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
- Add the shrimp in a single layer and cook for about 2-3 minutes per side until they turn pink and are cooked through. Remove the shrimp from the skillet and set them aside.
- Stir-fry the vegetables:
- In the same skillet, add the remaining 1 tablespoon of oil.
- Add the garlic and ginger, stir-frying for about 30 seconds until fragrant.
- Add the asparagus and cook for 2-3 minutes, stirring occasionally, until they start to become tender but still crisp.
- Add the mushrooms to the skillet and cook for another 3-4 minutes, stirring occasionally, until they release their moisture and soften.
- Combine and season:
- Once the vegetables are cooked, add the shrimp back into the skillet.
- Pour in the soy sauce, oyster sauce (if using), sesame oil, and honey (if using). Stir everything together to combine.
- Add red pepper flakes, salt, and pepper to taste.
- If the stir-fry looks dry, add a tablespoon or two of water or chicken broth to create a little sauce.
- Finish and garnish:
- Stir everything together for another 1-2 minutes, allowing the flavors to meld and the shrimp to heat through.
- Garnish with sesame seeds and green onions, if desired.
- Serve: Serve the shrimp and asparagus stir-fry hot, either on its own or with steamed rice, quinoa, or noodles.
