Soft cake with candied fruit

Preheat the oven: Preheat the oven to 180°C (350°F).
Make the candied fruit: Mix the candied fruit and raisins with a little flour to prevent them from falling to the bottom of the cake during baking.
Beat eggs and sugar: In a large bowl, beat the eggs with the sugar until the mixture is white.

Soft butter: Add the soft butter to the mixture and beat well to obtain a creamy consistency.
Add flour and baking powder: Sift the flour with the baking powder and add them to the mixture little by little.
Incorporate fruit: Add candied fruit and raisins to the mixture, then mix gently.
Baking: Pour the mixture into a buttered and floured cake tin. Bake for 40-45 minutes. Uncover the oven with a toothpick.
Tasting: Let cool, defrost and cut into slices. Ideal with tea or coffee!
