- If using frozen lobster tails, thaw them in the refrigerator overnight.
- Using kitchen scissors or a sharp knife, cut the lobster tails lengthwise down the middle to expose the meat. Gently pull the meat up, leaving it attached at the base of the tail shell.
- Season the lobster meat with salt, pepper, and a little lemon zest (optional).
2. Prepare the Scallops:
- Pat the scallops dry with paper towels to remove excess moisture. This will help them sear better.
- Season with salt and pepper.
3. Cook the Lobster Tails:
- Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the lobster tails to the pan, meat side down, and cook for about 3-4 minutes until the meat is golden brown.
- Flip the lobster tails over and cook for an additional 3-4 minutes, or until the meat is opaque and cooked through.
- Remove the lobster tails from the skillet and set them aside.
4. Cook the Scallops:
- In the same skillet, add 1 tablespoon of butter and a little more olive oil, if needed.
- Add the scallops to the skillet in a single layer and sear for 2-3 minutes per side until they develop a golden crust and are opaque in the center. Be sure not to overcrowd the pan, as this will prevent a good sear.
- Remove the scallops from the skillet and set them aside.
5. Make the Garlic Butter Sauce:
- In the same skillet, melt the remaining 1 tablespoon of butter over medium heat.
- Add the minced garlic and cook for about 30 seconds, or until fragrant.
- Stir in the fresh parsley, thyme, and basil (if using). Cook for an additional minute.
- Add the lemon juice and a pinch of salt and pepper to taste. Stir to combine.
6. Combine and Serve:
- Return the cooked lobster tails and scallops to the skillet, spooning the garlic butter sauce over the top.
- Let everything warm through for a minute, then remove from heat.
- Serve the lobster and scallops on a platter, garnished with extra chopped parsley and lemon wedges.
Tips:
- If you prefer, you can also broil the lobster tails instead of pan-searing them. Brush the lobster meat with melted butter, season, and broil for 5-7 minutes.
- For added richness, you can mix in a splash of white wine or a little cream to the garlic butter sauce.
