Tropical Pineapple Cheesecake
Ingredients
Crust:
1 cup graham cracker crumbs (about 8 graham cracker sheets)
1/4 cup finely chopped macadamia nuts (optional)
3 tablespoons granulated sugar
6 tablespoons unsalted butter, melted
Cheesecake
4 packages (8 oz each) cream cheese, at room temperature
1 1/4 cups granulated sugar
1 tablespoon cornstarch
1 cup full-fat sour cream
1 tablespoon finely grated lime zest
1 teaspoon vanilla extract
1/8 teaspoon salt
4 large eggs, at room temperature
Pineapple Topping:
1/4 cup granulated sugar
4 tablespoons cold water (divided)
1 lime, juiced and zested
20 oz mashed pineapple, drained
1 tablespoon cornstarch
Whipped cream and lime zest, for serving
