Ingredients
2 beets
300g soft cheese (such as cream cheese, ricotta, or goat cheese)
300g pasta (any type you prefer)
Salt to taste
Extra virgin olive oil to taste
Fresh basil leaves (for garnish)
Method
Preparing the Beets
Preheat the Oven: Preheat your oven to 200°C (392°F).
Bake the Beets: Place the beets on a baking sheet. Bake in the preheated oven for 30 minutes, or until they are tender and a knife can easily pierce through them.
Peel and Cut the Beets: Once the beets are cooked, let them cool slightly. Gently remove the peel using your hands or a knife. Cut the beets into chunks and set aside.
Cooking the Pasta
Cook the Pasta: While the beets are baking, cook the pasta according to the package instructions. Reserve some of the pasta cooking water before draining.
Making the Beet and Cheese Sauce
Blend the Ingredients: In a blender, add the beet chunks, the soft cheese, and a little of the reserved pasta cooking water. Blend until you get a very creamy and homogeneous mixture. If needed, add more cooking water to reach your desired consistency.
Season the Sauce: Add salt and a drizzle of extra virgin olive oil to the beet and cheese mixture. Blend again to combine all the flavors.
