Ingredients:
For the Meatloaf:
- 1 1/2 pounds ground beef (80/20 or leaner)
- 1/2 pound ground pork (optional, for added flavor and moisture)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs (preferably plain)
- 1/4 cup milk (whole milk or buttermilk works best)
- 1 large egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme or Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil (for sautéing onions and garlic)
For the Glaze:
- 1/4 cup ketchup
- 1 tablespoon brown sugar
- 1 tablespoon Dijon mustard (or yellow mustard)
- 1 tablespoon apple cider vinegar (optional)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
2. Prepare the Meatloaf Mixture:
- Heat olive oil in a skillet over medium heat. Add the chopped onions and sauté for about 5 minutes, until softened. Add the minced garlic and cook for another minute, until fragrant. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the ground beef, ground pork (if using), breadcrumbs, milk, egg, Worcestershire sauce, thyme (or Italian seasoning), salt, pepper, and the sautéed onions and garlic. Mix everything together gently with your hands or a spoon until just combined (be careful not to overmix, as this can make the meatloaf tough).
