Here’s a simple and delicious recipe for a Spinach Quiche, a classic dish that’s perfect for brunch, lunch, or even dinner. This recipe uses a flaky pie crust, a creamy filling with spinach, and a mix of cheese for extra flavor.

 

Ingredients:

For the crust:

  • 1 pre-made pie crust (or homemade if you prefer)

For the filling:

  • 1 tablespoon olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach (or 1 package frozen spinach, thawed and drained)
  • 1/2 cup shredded cheddar cheese (or any cheese you like)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk (or heavy cream for a richer filling)
  • 3 large eggs
  • 1/4 teaspoon ground nutmeg (optional, adds depth of flavor)
  • Salt and pepper to taste
  • 1/2 teaspoon dried thyme (optional)

Instructions:

1. Prepare the Pie Crust:

  • Preheat your oven to 375°F (190°C).
  • If you’re using a store-bought pie crust, follow the instructions on the package for pre-baking it (usually 10-12 minutes to set). If you’re using a homemade crust, roll it out and fit it into a 9-inch pie dish. You can pre-bake it for 5-7 minutes to prevent it from getting soggy.

2. Cook the Spinach Filling:

  • Heat the olive oil or butter in a large skillet over medium heat. Add the chopped onion and cook for about 3-4 minutes until softened.
  • Add the garlic and cook for another 30 seconds, until fragrant.
  • Add the fresh spinach (or thawed and drained frozen spinach) to the skillet. Cook for about 4-5 minutes, stirring occasionally, until the spinach is wilted and any excess moisture has evaporated. Season with salt, pepper, and a pinch of nutmeg.
  • Remove the skillet from the heat and let it cool slightly.
