Apple Fritters
Ingredients:
For the Fritters:
- 2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced into small pieces
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg (optional, for extra flavor)
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
- Vegetable oil for frying (enough to fill a deep frying pan about 1-2 inches deep)
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk (or more, for desired consistency)
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions:
1. Prepare the Apples:
- Peel, core, and dice the apples into small chunks. Place them into a bowl and set aside.
2. Make the Fritter Batter:
- In a large mixing bowl, combine the flour, sugar, baking powder, cinnamon, nutmeg (if using), and salt.
- In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir to combine. The batter should be thick and slightly lumpy, but not too dry.
- Gently fold the diced apples into the batter.
3. Heat the Oil:
- In a deep frying pan or skillet, heat about 1-2 inches of vegetable oil over medium heat. The oil should reach around 350°F (175°C). You can test the oil by dropping a small spoonful of batter into the oil — if it sizzles and rises to the surface, the oil is ready.
4. Fry the Fritters:
- Using a spoon or a cookie scoop, drop small portions of the batter into the hot oil, being careful not to overcrowd the pan.
- Fry for about 2-3 minutes on each side, or until the fritters are golden brown and crispy. Use tongs or a slotted spoon to flip them carefully.
- Once fried, transfer the fritters to a plate lined with paper towels to drain excess oil.
