A Yolk Dough and Meringue Cake is a delicious, layered dessert that combines a rich and soft yolk-based dough with a light, airy meringue topping. The contrast of textures between the tender cake and the crispy, melt-in-your-mouth meringue makes for a delightful treat. Here’s how you can make it:
Yolk Dough and Meringue Cake
Ingredients:
For the Yolk Dough:
- 4 egg yolks
- 1/2 cup sugar
- 1/2 cup butter, softened
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup milk
For the Meringue:
- 4 egg whites
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cream of tartar (optional, for stability)
Instructions:
1. Prepare the Yolk Dough:
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan, or line it with parchment paper.
- In a large mixing bowl, beat the egg yolks and sugar together using an electric mixer until thick and pale, about 3-4 minutes.
- Add the softened butter and vanilla extract, continuing to beat until smooth and combined.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the egg mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
- Pour the batter into the prepared cake pan and smooth the top.
2. Bake the Yolk Cake:
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cake cool completely in the pan. Once cooled, you can remove it from the pan and transfer it to a cooling rack or serving plate.
3. Prepare the Meringue:
- In a clean, dry bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
- Gradually add the sugar, about 1 tablespoon at a time, and continue beating until stiff peaks form and the meringue is glossy. If you’re using cream of tartar, add it in with the sugar to help stabilize the meringue. Add the vanilla extract and beat to combine.
4. Assemble the Cake:
- Once the yolk cake has cooled, spread the meringue evenly over the top of the cake.
- You can also swirl the meringue to create peaks for a decorative effect.
5. Bake the Meringue:
