Ingredients:

  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • 1/4 cup sour cream (optional, for creaminess)
  • 2 tbsp butter
  • 1/4 cup green onions, finely chopped (optional)
  • Salt and pepper to taste
  • 1 cup breadcrumbs (Panko breadcrumbs work great for extra crunch)
  • 1 egg, beaten (for binding)
  • 1/2 cup flour (for coating)
  • Olive oil or cooking spray (for baking)

Instructions:

1. Prepare the potatoes:

  • Boil the cubed potatoes in salted water for about 10-15 minutes or until they are tender and can be easily pierced with a fork.
  • Drain the potatoes and return them to the pot. Mash them thoroughly until smooth.
