Ingredients:
- 4 large russet potatoes, peeled and cubed
- 1/2 cup shredded cheddar cheese (or your favorite cheese)

- 2 tbsp butter
- 1/4 cup green onions, finely chopped (optional)
- Salt and pepper to taste
- 1 cup breadcrumbs (Panko breadcrumbs work great for extra crunch)
- 1 egg, beaten (for binding)
- 1/2 cup flour (for coating)
- Olive oil or cooking spray (for baking)
Instructions:
1. Prepare the potatoes:
- Boil the cubed potatoes in salted water for about 10-15 minutes or until they are tender and can be easily pierced with a fork.
- Drain the potatoes and return them to the pot. Mash them thoroughly until smooth.
