Cheesy Potato and Onion Tortillas

Prepare the Potatoes:
Boil the Potatoes:
Peel and chop the potatoes into small cubes.

Bring to a boil and cook until the potatoes are tender, about 10-12 minutes.
Drain the water and set the potatoes aside.

Cook for 3-5 minutes until tender, then drain and set aside.
Assemble the Filling:

In a large bowl, combine the boiled potatoes, cooked green peas, and chopped green onions.
Add the shredded mozzarella cheese and mix well.
Season with salt and pepper to taste.

Lay the tortillas flat on a clean surface.
Spoon the potato and cheese mixture onto one half of each tortilla.
Fold the other half over the filling to form a semi-circle.
