Cinnamon Sugar Cheesecake Bars Recipe
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs (about 10 graham crackers, crushed)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/4 tsp ground cinnamon (for a bit of spice)
For the Cheesecake Filling:
- 16 oz (2 packages) cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream (optional for extra creaminess)
For the Cinnamon Sugar Topping:
- 1/4 cup granulated sugar
- 1 tbsp ground cinnamon
- 1 tbsp unsalted butter, melted
Instructions:
1. Prepare the Crust:
- Preheat your oven to 325°F (165°C). Grease a 9×9-inch baking dish or line it with parchment paper.
- In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and ground cinnamon. Mix until the crumbs are evenly coated with butter.
- Press the mixture firmly into the bottom of the prepared baking dish to form an even crust.
- Bake the crust for 10 minutes, then remove it from the oven and allow it to cool slightly while you prepare the cheesecake filling.
2. Make the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the sugar and beat until fully combined.
- Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
- If using, fold in the sour cream for extra creaminess and smoothness.
- Pour the cheesecake filling over the cooled graham cracker crust and spread it evenly.
